Slimming World: Fish Tacos

Ingredients
  • Two tilapia fillets (sliced in to 4 strips each)
  • shredded lettuce
  • sliced bell pepper
  • ½ carrot - grated
  • ½ an onion diced
  • 1tbsp taco seasoning
  • 60g grated cheddar cheese (Syn if you don't use as HeA)
  • 4 x 100cal soft tortillas (20 syns)
  • Pam
  • For the sauce:
  • Taco seasoning (I like mine quite strong so I added a few tbsps)
  • 4tbsps of natural fat free yoghurt (or more if you like it saucier!)
  • ¼ of a cucumber finely diced
  • 1 tsp of diced garlic
  • salt and pepper
Instructions
  1. Sprinkle the fish with a little taco seasoning and fry in some pam/fry light for about 10 minutes until cooked through. (At around 7 minutes, toss in the onion if you don't like eating raw onion.)
  2. While the fish is cooking, make the sauce. Combine the yoghurt, remaining taco seasoning, cucumber and garlic in a bowl and stir until mixed.
  3. Compile your taco, start with your tortilla (which could also be whole wheat and one of which can be used as your HeB) flat, drizzle some sauce down the centre, add your lettuce, carrot, bell peppers, I tossed in some additional cucumber but you could add any number of superfree veggies) add 15g of shredded cheese to each of the 4 tacos and top with your freshly cooked fish (and onions).
