SkinnyTaste's Chicken Cordon Bleu

I’ll tell y’all about our Christmas celebrations and trip to the Golden state, but I wanted to kick-start the New Year on Las and Col go Texan, with a recipe, not just a recipe, but a diet and resolution friendly recipe to-boot!

I recently discovered, through a friends Facebook page, a new blog.  I regularly ask for blog suggestions from friends, readers and other bloggers, but I stumbled upon this little gem by being nosy on my friends page.  Turns out, I scored!

It’s called, Skinny Taste, and is written by a chick named Gina.  As the name suggests, Gina’s focus is on low-fat, healthier foods and recipes – PERFECT for people who are trying to either get back on the horse, (or like me, flog an already-dead horse).  But, either way, the day I found her blog, I must have printed about 30 recipes out to try.  That’s unheard of for me, normally it’s 1 or 2, max!

For our New Years day dinner, I’d thought ahead and picked up some ingredients for one of Gina’s recipes before the Christmas crazy.  As it happened, that was a great move on my part, because tonight’s dinner was DELICIOUS!

Chicken Cordon Bleu

  • 4 chicken breast halves
  • 2 large eggs
  • 1 tbsp water
  • 3/4 cup seasoned (whole wheat) breadcrumbs
  • 12 slices thin lean deli ham
  • 12 slices reduced fat Swiss cheese
  • salt
  • spray oil
  • toothpicks

Preheat oven to 350°.

Slice chicken breast halves into thin cutlets. I usually get 3 thin cutlets out of one breast half. Pound them to make them thinner if you wish. This helps when you wrap the cutlets.

Cut each slice of cheese into rectangles and stack on top of each other. Place a slice of ham on top of the chicken, top with cheese and wrap chicken around to completely cover cheese, using toothpicks to secure. (Make sure no holes so cheese doesn’t leak out) Season with a little salt.

Whisk egg and water to make an egg wash. Dip chicken into egg wash, then breadcrumbs.

Spray cookie sheet with oil and place chicken on cookie sheet. Lightly spray chicken with oil and bake about 25 minutes, until cooked.

A few , I used HEB ranch flavoured breadcrumbs instead of the whole wheat bread crumbs and, I hate to say this, but I don’t really like the deli ham here in the states.  I’ve tried the packaged stuff, the over the deli counter stuff, it’s just too sweet – yes, even the non-honey coated stuff. Man, what I’d give for a packet of Denny crumbed ham! I could eat that stuff all day and night!

Anyways, instead, I paid a little more (actually, not a whole lot more!) and I got some Italian prosciutto ham, yes, a little more ‘obviously’ fatty than deli ham, but I did trim most of the visible fat off before I used it.

I served the chicken with some rosemary and garlic roasted potatoes (using a squirt or two of spray oil) and they went down a real treat.  Great recipe and most people already have the ingredients in their fridge!

I can’t wait to see what the rest of my SkinnyTaste recipes have in store for me, if this one is anything to go by, I’m excited! I’ll keep y’all posted 🙂
