Slimming World: Baked chicken fajitas

After the ‘squash fail’ last night, I needed something quick, easy and tasty to make for dinner.  I’d seen this on a number of Pinterest boards (yeah, yeah, I know.  All I do is surf pinterest!) and I was curious.  I’m proud of myself for not ordering pizza – we even have a pizza banked enough in reward points to claim a free pizza, but I was strong and resisted.

Most of the Six Sisters’ stuff is quick, and while many are healthy recipes, many have no real reservations about being full calorie, comfort food.  That said, many of their recipes are easy to amend to Slimming World ways, they appear on my ‘100 meals’ a number of times.

We love fajitas, and being down here in Tex-mex country, it’s a common meal for us (normally served up with a salt rimmed fish bowl margarita! whoop!) and I had some fresh-frozen tortilla wraps from ‘el bollilo’ the bakery across the street from my favourite farmers market, Caninos.

I normally just use store-bought taco seasoning for my fajitas, but this seasoning seemed something tasty and different so I thought, why not? Plus, Col loves fajitas, so it was win-win!

It’s definitely going in to my rotation, I now have ‘taco seasoned fajitas’ and ‘Six Sisters’ seasoned fajitas’ going on my recipe list.  I don’t like tomatoes and Col doesn’t like spicy, so we omitted the chiles and I served it with a few tablespoons of salsa (1 syn) and one small white flour tortilla for 6 syns.

Baked chicken fajitas

Ingredients
  • 2 large chicken breasts, cut into strips
  • 1 (15 ounce) can diced tomatoes
  • 1 (4 ounce) can diced green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • Pam/Frylight
Instructions
  1. Preheat the oven to 400 degrees. Grease a 13×9 baking dish.
  2. Mix together chicken, tomatoes, chilies (I don't like either so I left them out!), peppers, and onions in the dish.
  3. In a small bowl combine the spices. Spray Pam over the chicken mix and toss to coat.
  4. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve with warmed tortillas or rice and enjoy!
