Slimming World: KFC-style chicken

Alrighty then, this recipe was very educational for me, it taught me that I am sensitive to Chinese five spice.  My first (and only lesson about this dish) is that next time, use less five spice!

This was recipe number two of our dinner tonight, the first part, cheesy broccoli potato bake was a success and this chicken ‘fake-away’ seemed like a good accompaniment to have with it.  I was right, aside from the overwhelming nature of the 5-spice, it was tasty and I’d definitely make it again!

Ingredients
  • 1 tsp garlic granules,
  • 1 tsp onion granules
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp ground Black pepper
  • 1 tsp Italian mixed herbs
  • 1 tsp cayenne (omitted this as Col doesn't like too spicy)
  • 1 tsp mustard powder (I didn't have this on-hand to add to the recipe)
  • 1 vegetable oxo cube
  • 1 chicken oxo cube
  • 2 tablespoons smash powder (I can't get this here so it was omitted)
  • 1 tsp Chinese five spice (I'd half this next time!)
Instructions
  1. Mix all together in big bowl, coat skinless chicken portions (I used chicken breasts - sliced) in dry mix and place on a 'greased' tray (sprayed with Pam).
  2. Roast at about 350F until the chicken is cooked through (about 20 minutes)

  1. my mom used to make a similar recipe, but she would coat the chicken with corn flakes, which added some crunchiness…

  2. I make a similar coating but with crumbled weetabix.
    (Omit the smash)
    Mix all your dry ingredients together with the crumbled weetabix . I use Salt, Pepper, Chicken oxo, Garlic powder, onion gravy granules, cayenne etc.
    Roll the skinless chicken in a bowl of beaten egg then roll in the dry mix coating before baking in the oven.
    Lovely. Add corn on the cob and Slimming World wedges or chips for a home made KFC.
