Slimming World: Mexican ‘Dorito’ Casserole

Alright guys, there’s nothing I hate more than wasted syns.  Which, considering I couldn’t taste the doritos, is what I feel like this casserole was.  Do yourself a favour, save yourself the 20-odd syns the ‘chips’ add to this dish.  In fact, turn it in to a lasagne by layering it between pasta sheets – OR, turn it in to a pasta bake, adding part-cooked pasta shapes to the mix before topping with cheese and baking.

The mix itself was DELICIOUS! We’ll definitely be having it again, the recipe below has been modified from the original version (which can be found here) to be more Slimming World friendly, I added veggies and cut the syns where I could without losing the taste.
It’s 31 syns for the entire dish, meaning the portions are anywhere between 8 syns (for 4 portions) or 5 syns a piece, for 6 portions.  However, if you cut out the unnecessary doritos, you got yourself an 11.5 syn dish (total) which is a MASSIVE reduction with zero change in the taste or texture of the dish!

Slimming World: Mexican Dorito-less Casserole

Ingredients
  • 2 cups shredded cooked chicken (I just used two chicken breasts, slow cooked and shredded)
  • 60g shredded cheese (2 HeA, syn if you're not using your HeA!)
  • 1 can cream of light chicken soup (3.5 syns)
  • ½ cup skim milk (2 syns)
  • ½ cup fat free sour cream (4 syns)
  • 1 can tomatoes (w/mild green chilies) I used regular tinned tomatoes
  • ½ packet taco seasoning (or more- to taste)
  • Bag of doritos (I used 2 portions of Doritos (14syns) and 1 portion of Special K cheddar chips (5.5 syns))
  • Veggies - I added peas, mixed onions and mixed peppers
Instructions
  1. Pre-heat oven to 350-f degrees.
  2. In a mixing bowl, combine all ingredients except doritos.
  3. In a greased 2 qt baking dish, put a layer of crushed doritos, then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 40 minutes, till bubbling hot.
