Slimming World: Slow cooker pork marsala

I tried a Marsala pork recipe a loooooooooong time ago, way before I joined Slimming World.  Due to the fact Col and I have been on a sort of ‘lock-in’ over the holidays, when I opened my freezer and saw some boneless, lean pork chops, I decided that I would have a stab at making a Slimming World friendly version of this recipe for dinner, to save having to go outside into the world and pick up some groceries!

The entire recipe is 14syns (for the soup and the Marsala wine) and I packed it full of super free veggies.  Feel free to add whatever veggies you’d like, if I’d had some bell peppers I’d have chucked those in too, I serve it over either boiled rice, egg noodles or with something like hassleback potatoes.

Slimming World: Slow cooker pork marsala

Ingredients
  • 1 tbsp minced rosemary
  • 1 tsp garlic powder (you can use a fresh, minced clove too if you'd rather!)
  • 6 (4oz) boneless, lean pork chops (chicken works well in this recipe too)
  • 1 onion - diced
  • 3 carrots - sliced
  • 1 cup frozen peas
  • 1 cup frozen spinach
  • 1 cup butternut squashed - diced
  • 1 (4 ounce) package sliced mushrooms (I hate mushrooms, so omitted them)
  • 1 can condensed 98% chicken soup (9 syns)
  • ¼ cup Marsala wine (5 syns)
  • Pam/FryLight
  • Salt and pepper for seasoning
Instructions
  1. Brown the pork chops on both sides in a medium frying pan sprayed with spray-oil, about 4 minutes per side.
  2. Place your veggies of choice and garlic into a slow cooker. Add the seared pork chops, then pour in the cream of mushroom soup and Marsala wine, stir together. Cover, and cook on Low until the chops are tender, 6 to 8 hours.

It’s tasty, and for me, it’s worth the syns (though next time I’d serve some of the veggies on the side as there was just way too many veggies for the amount of sauce).  I know many people don’t like using their syns on food, but, for me, I put a value on eating as close to ‘regularly’ as possible and sometimes that means a few syns in my dinner!

  1. Hi your recipe for slow cooked pork marsala sound great .We will be trying that this week. I have a query in your ingredients you put chicken soup then in the instruction you put mushroom soup will it make much difference . From Pauline
